Us Winnipeggers are a hearty bunch. We work hard, love our Jets and survive some pretty intense weather. At the end of the day, we want to relax, but the after-work dinner rush is all too real. It can be pretty difficult to muster up the energy and creativity to put dinner on the table when it feels like you haven’t seen the sun in weeks. On days like that, it is tempting to order in or make a run to the McDonald’s drive-thru, but that isn’t always the tastiest and budget-friendly choice, now is it? Personally, when I am feeling the winter energy drain, I make soup. Homemade soups are quick, hearty and really difficult to mess-up.
One of the oldest and most tried and true recipe on my site is the perfect soup for this time of year. My Zippy Tomato & Tortellini Soup is made from a quick homemade tomato soup and jazzed-up with cheese filled pasta, spinach and spice. Despite being vegetarian, it is heartier than your average soup and leaves nothing to be desired. Even better, you can have a filling and delicious diner on the table in just a bit over 30 minutes. How’s that for managing the after work dinner rush? To round-out the dish, I suggest having a loaf of Winnipeg Rye on the table to accompany this soup for dipping and dunking.
