WINNIPEG, Man. — It can be pretty difficult to get excited about side dishes. Rice, salads and roasted veggies all seem to be more of an addition to a meal than the star of the show. It doesn’t have to be that way! All you need is a bit of creativity, spice and 20 minutes to make a flavourful batch of Cajun Couscous!
Couscous is typically reserved for summer salads but when mixed with the creole version of Mirepoix, it can be a fun grain dish that is still veggie forward. Celery, onion and green bell peppers are an affordable and flavourful mixture that bring this Couscous dish to life and make it perfect for the winter dinner blues. Looking for spice without the heat? Reduce the amount of cayenne pepper in the dish and use a cup of chicken broth instead of water.
